Happy New Year!!! 2011

I trust you had a great Christmas/holiday season and are now ready to eat in such a way to improve your health, your stamina, and your looks!!!

I got home from a 2-week visit with my dear friend Margaret (Brown Bear on Provida's website) on Tuesday evening. We (and our friend Debbie) all had various forms of upper respiratory infections, so we mainly sat around in our gowns and robes watching and re-watching all the Hallmark Christmas movies and eating things we shouldn't have been eating (I won't name them, so I don't make you wish you had some!!!). I have to admit I gained 4.4 lbs. over the 2 week period, which is not good, but better than I've done in years, past.

My vacation ended on Tuesday of this week, so I hit our Central Market store for all their wonderful bulk spices, fruits, veggies, and lean meats.

Last night I sliced four beautiful garnet sweet potatoes, which I placed into the bottom of my Crock pot. Then, I topped it with a 2 lb. pork loin roast, which I had trimmed to remove all visible fat. In a small bowl I then mixed 1/2 c. Sugar Twin brown sugar with 1/4 tsp. cayenne papper (red), 1/2 tsp. black pepper, and 1 tsp. each of onion and garlic powder or granules. I rubbed the pork completely with this mixture, and sprinkled what was left all through the potato slices. If you will use a Crock pot plastic cooking liner, you will have very little clean-up afterwards. Put the lid on and cook on low for 10 hours. YUM

Another thing I did last night was to cook medium red new potatoes and eventually broccoli florettes in a new pasta cooker pan for the microwave. That was an incredible tool. It was so simple and easy to use, and I can see how versatile it is!! I bought one for me and one for Margaret from QVC, and that was a really good choice!

I still have carrots, yellow squash, and a few other items to cook for this week. There will be turkey sausage balls, mini-beef patties, BBQ sauce, sauteed onions & mushroom slices, etc. I had chicken breasts already cooked in the freezer.
