Sunday afternoon

I was pleased to see that I was down 8.2 lbs. this morning!!! I think I need to prepare some of the BBQ sauce that I love to have with my grilled chicken and maybe I'll put the pork loin and sweet potatoes on to cook in the crockpot. I buy only unseasoned pork loins and then place the meat atop the peeled and sliced sweet potatoes and all the spices. It is so yummy and is a dish that my friend Margaret re-worked so that we could have it. The recipe is in the June or 2007 archives toward the end, in main dishes (I think!!). I'll put the recipe at the end of this message for you, and will tell you this is one of my all-time favorites. This is a type C protein to be substituted in place of very lean beef.

I would also like to recommend a book for you to read, especially if you are a sweet-aholic or a carb-aholic, but it is good for any of us who need to take control of our eating habits. It is called Breaking the Food Seduction, by Neal Barnard, M.D.

Crockpot Pork And Sweet Potatoes

4 Sweet Potatoes,Peeled And Sliced
1 lb Pork Loin Roast, with all visible fat removed
1/2 c Brown Sugar Twin (brown sugar substitute)
1/4 t Cayenne
1/4 t Black Pepper
1/4 t Garlic Powder
1/2 t Onion Powder
NOTE: I like things very spicy, so I tend to double the red and black peppers, and generally use about 2-3 TBSP. each of the garlic and onion powder.

Place potatoes in bottom of a slow cooker. Place pork on top. Combine remaining ingredients and sprinkle over pork and potatoes. Cover and cook on low 8 to 10 hours. Remove pork and slice. Serve juices over pork and potatoes. I find that if I can sprinkle some of the rub over the sweet potatoes and then pierce the pork loin in several places all over before adding the spice rub, the entire dish is better seasoned.
Yield: 8 Servings
