Addendum Recipes for 2007

SPICY TURKEY SAUSAGE (FROM LIZ MAXSON)
(Don't let the number of ingredients stop you from making these. They're worth it, if you like foods spicy!!)


· 2 pkg. Honeysuckle White 97% lean turkey breast (usually found at WalMart)
· 1 tsp. each of the following:
o Greek Oregano (or any other oregano)
o Ground Cumin Seed
o Paprika (I use smoked sweet Spanish paprika)
o Ground Celery Seed
o Coarse Black Pepper
o Ground Sage Leaf
o Ground Coriander
o Curry Powder
o Ground Fennel Seed
o Cracked Chilies (I use more because I like it hot!)
o Garlic Powder
o Onion Powder

· 2 Tablespoons each of the following:
o Whole Fennel Seeds
o Parsley Flakes

Mix all together with your hands. 1/4 cup equals your 2 oz. serving. I roll mine into “meatballs” and bake on a gridded rack over a Silpat-lined jellyroll pan. I do spray the grid with PAM to prevent sticking. In my oven, I bake them for 30 min. at 350 degrees. Do not overbake….they’ll be too dry. Allow to cool for 20 min. and then put them into snack-size bags or just put them all into a gallon bag in the fridge. This is a great grab and go snack that is also great hot or cold. I love them cold with the BBQ sauce made with Diet Dr Pepper elsewhere on this BLOG.

Note from Liz: Originally, I made these with about 5 herbs/spices and added garlic, but I really like these better. Also, I have flattened the balls into patties and baked them for the same amount of time.

Here are new recipes that I am using in 2007. If you want to see the others, they are located in the archives, possibly as far back as Feb. and May of 2006. Just remember, that I like things very spicy, so you may want to adjust the recipes according to YOUR tastes. Please contact me directly at emaxson2@tx.rr.com if you have questions or comments. Liz


Breakfast Sausage (Makes 40 2-oz. patties)

2-1/2 lbs. ground turkey breast (1-3% lean; Do not use 7% lean)
1 1/2 tbsp. sage
1 1/2 tsp. thyme
1/2 tsp. ginger
3/4 tsp. nutmeg
1/2 tsp. white pepper (I used black)
1/4 tsp. cayenne pepper
1/2 cup water (I omitted this)

I also added 4-5 cloves of minced garlic, 1 Tbsp. crushed red peppers, 1 Tbsp. fennel seeds, and ½ tsp. ground fennel, just because I like my sausage really spicy!!

1. Combine the ground meat with all ingredients, mix/knead well. Taste test by cooking a small thin patty. Taste test by frying a small thin patty. Add more spices if needed at this time and remix. Taste test again if you feel it's necessary.

2. For bulk sausage simply form sausage patties or stuff into poly meat bags. Refrigerate fresh sausage up to a week or freeze until needed. Personally, I bake the 40 patties on a grid type cooling rack, which I spray lightly with PAM. I place the rack in a jelly-roll pan (large cookie sheet with 1" sides) and I use a Silpat silicone baking sheet under the grid. You could also use aluminum foil. They bake for 30 minutes in a pre-heated 350 degree oven. A 1/4 c. measure will make perfect 2 oz. patties.


Oven-roasted Beef and Vegetables
Lean beef steak (your choice)
2 potatoes, in large chunks
1 lb. carrots, julienned
1 large onion, sliced in 1/4" slices
1 can NSA diced tomatoes
Mrs. Dash's Grilling Blend for Steak
1/2 c. dried onion flakes
Directions:
1. Remove all visible fat from the steak
2. Line baking pan with foil and heat oven to 350 degrees
3. Slice onion and place on foil in baking pan
4. Top with 1/2" potato chunks
5. Add carrots
6. Sprinkle all with the Mrs. Dash, including both sides of the steak
7. Place steak on top of veggies.
8. Empty tomatoes and juice all over the steak and veggies.
9. Cover with foil and bake for 1 hour at 350 degrees. Turn the oven to 300 degrees and bake for 2 more hours, or until steak and veggies are tender.
